Grammatically, "Founder's Day" means "the day of the (singular) founder", while "Founders Day" ... kind of doesn't mean anything. If there was an apostrophe after the S, it would mean "the day of the (multiple) founders." As is, it might mean that, it might be a typo, it might be a day dedicated to someone named Founders, it might mean the day that, historically, something foundered.
