In everyday discourse you can just either and people will know what you mean. More formally, you should use "muslim" when referring to a person and "islamic" as an adjective for some other thing or activity.

In Arabic, the prefix "mu-" functions the same way as the English suffix "-er," meaning, "one who." For example, a "worker" is "one who works." Likewise, a "muslim" is "one who follows Islam." (There is also a vowel shift.)

In another example, one who practices jihad is a mujahid. The concept is apparently tricky for some reporters, who had started to use their own coined word, "jihadi."

Incidentally, the "mu-" in "Muhammed" is the same functionary. The name means, "one who is worthy of honoring/praising."

A Muslim is a person. Islamic is an adjective that refers to non-human things. For example: A Muslim performs numerous islamic rituals.
