The grade in eggs is an indicator of freshness, quality, and size of the air cell. In general, there are three acceptable grades: AA, A, and B. Grade AA is the freshest and has the smallest air cell. But there is one exception. Jumbo eggs have only two ratings: A and B. And that holds true even when they are organically produced. Organic eggs are produced in compliance with organic standards. For example, the hens must be cage-free. Cage-free means safe, secure, spacious community living in hen houses. The hens must be free to do, drink, eat, and naturally molt when and where they want. They must be given organic feed such as 100% organic corn, flax, soybean meal and wheat. What they are not given are steroids, hormones, or antibiotics except in the case of infectious outbreaks.
