To answer your question, nothing really. They both live and have pain and families and such. It's the same thing as whether a bee's life is more important then a humans.

Pain

Plus they make honey, which is good for us

It's exactly the same right? So why do we go swatting down bee's?

Anyway back to your question, we use tuna as food, not dolphins. Plus I'm pretty sure theres a lot more tuna then dolphins. Oh, and theres also the fact that humans like us automatically like friendly dolphins more then tuna.
