A search engine deals with information that it has cataloged after its spider has crawled the site(s) and put in an orderly fashion that can be categorized and found with a keyword search.

A mail server deals with the delivering and sending of emails. It deals with chunks of information only and the transfer of those chunks through the use of the SMTP and POP protocols and does not deal with the actual content.
