The sepals roll is to cover and protect the imature flower bud, it also plays a small roll in supporting the petals once the flower has opened. Sepals are normally green.

Petals on the otherhand are normally brightly coloured, some may even look plain, but have infra-red markings on them to attract insects (bees, moths, ants etc.) as well as birds to assist with pollination.
