A stock horse is a horse that fits into a specific category for conformation and job. Stock horses are usually compact , fairly short, know how to work cattle, can work off of loose rein aids or no rein aids at all , and are workman like. A pack horse can be any breed or type so long as it can carry a pack saddle and pannier's. Donkeys and mules typically make the best pack animals due to their strength in relation to their size but stock horses and draft crosses usually do very well also. A pack horse must be sure footed, not prone to spooking, and
can work off of absolutely no rein or lead control.
A tight pack is were they are on there side and a loose pack is where they are not on there side. :)

From the Whirlpool site it looks like the only difference is that the p suffix refers to a pack of 2. There is a T suffix also which refers to a triple pack.
