The shortest portions include Yitro, Nitzavim, Vayelech, Ha'azinu, V'zot Habracha etc.

None of those is particularly 'easy' for the Baal Koreh to read, and it's probably fair

to say that there's no Torah portion at all that's easy to understand fully.

For reading, my personal favorite is Vayechi, mainly because I've done it so many times.

I pray that I may continue doing it until I get it right.

In order that the weekly Torah readings not fall into disuse, the Sages instituted a custom to read a portion from the prophets that was a similar subject to each week's Torah reading.

What is the Torah portion for Rosh Hashanna?

The Torah reading for Shacharis (morning) on Yom Kippur is the beginning of the parsha 'Acharei Mos' (Leviticus, Ch. 16), which describes the service in the Tabernacle, and later in the Holy Temple, performed by the Kohanim (Priests) on Yom Kippur. The Torah reading for Mincha (afternoon) on Yom Kippur is a section taken from the end of the same parsha (Leviticus, Ch. 18), which deals with moral standards, and in particular, with an enumeration of forbidden relationships and marriages.

How can you memorize a paragraph and a half of a Torah portion if you have to chant it in two days?

A method of memorizing an aliyah (portion) from the Torah is to begin by mastering the text alone. Once the chanter can smoothly say the text without a tune, the chanter will chant the entire aliyah using the names of the trope markings as a substitute for the text. Finally, the chanter will replace the trope names with the actual text from the Torah. With enough practice, the chanter will be prepared to perform the mitzvah of chanting from the Torah.
