Heat melts it and makes it nasty... Cold freezes it and makes it hard to eat (unless it has co-co on it)
Certain enzymes in bananas covert the starch in bananas into sugar. This is part of the ripening process, which causes the fruit to be sweeter and softer as the conversion takes place. Temperature has an affect on these enzymes in such a manner as to cause the conversion to accelerate and, thereby, the ripening process to accelerate.

Heat doesn't make bananas rot. It's the ethylene that the fruit produces that causes the banana to age. Of course bananas grows on the plant in the sun which can sometimes get pretty hot. But the bananas don't rot while on the plant. The plant uses the energy of the sun to make the banana. Once the banana is off the plant, it begins to degrade because of the imbalance in hormone ratios (ethylene and stuff). It's pretty complicated stuff, but overall, heat doesn't really make bananas rot. Its all in the physiology of the plant.

If you put a banana in the freezer and one in warm temp. the banana in the freezer will rot faster. But if u put a banana in the fridge the one in the fridge will last longer.
