salt and pepper the cheeks, add a 1/4 cup of beer/red wine (or "YAWN" water) throw in a dried bay leaf or two, a med. onion cut in half and a few teeth of garlic. all of this into a 6 quart pressure cooker, lock down the lid and turn the heat on high, when you hear the sounds of ticking/steam releasing turn the heat down to half and let it go for one hr. turn off heat and let set for 30 min before releasing the lid. try it on corn tortillas with some chopped onion and cilantro.

Keep checking as you shouldn't run low on water. Remove the beef bones and the bay leaf after an hour and add some pepper and salt to the beef cheek. Next, add a few dashes of rosemary and some thyme and drop the herbs and vegetables into the pot and start stirring. Drop the beef cheek, keep stirring and then cover it. Let the whole thing braise for a minimum of one hour. Now, poke the meat using a fork to check if it's already tender. If the meat is tender, then you should be able to serve.
