The flour helps to soak up the liquid that you get when the apples start cooking; without the flour, you will end up with a soggy crust, and the bottom of your pie may be too wet to even allow you to slice and serve.

the general purpose of flour is as a thickening agent. I'm guessing it does just that in apple crumble - thickens it up and minimises the amount of juice from the apples in the end product.

You couldn't have picked a more simple or delicious baked dessert than apple crumble!For the filling:Peel, core and slice (not too thin) 1kg apples and put into a pan with a couple of tablespoons of water, 25g brown sugar and 1tsp ground cinnamon. Put into a 2l ovenproof dish, any shape, but deep enough to take the mixture comfortably, and set aside.For the topping:Put 225g plain flour into a mixing bowl with 75g butter and rub in together until crumbly.
