Ottoman Empire
Byzantium was redeveloped by Constantine the Great who designated it as imperial capital and renamed it Constantinople after himself (it means City of Constantine). It was inaugurated in 330. After the Ottoman Turks took Constantinople in 1453, under the sultans, it was called Kostantiniyye and Islambol or Islambul. This turned into Istanbul when Turkey adapted the Latin alphabet in 1928. In that year, the new republican government also made it the city sole name.
I guess you mean the last event in the history of ancient Rome. Rome still exists. Perhaps the last event in the history of the western part of the Roman Empire was the conquest of the Domain of Soissons, the last territory the Romans held in Gaul by the Franks (a Germanic people) in 486. The last event in the history of the eastern part of the Roman Empire was the capture of its capital, Constantinople, by the Ottoman Turks in 1453. Historians have coined the term Byzantine Empire to indicate the eastern pat of the Roman Empire after the fall of the western part.

There are a number of things which best identify Ottoman Empire. Some of them include expansion of territories, having so many sultans and controlling the world at large among others.
I don't know all of them, but the first one is Mehmed II.
