Probably it played many roles, but the most basic is that the Romans stole, or borrowed, many of the Greek ideas for their own culture. Nearly all the stories of the Roman gods and goddesses came from Greek mythology. Romans changed the names and a few of the specifics (or none at all) and made the stories their own. The Roman Empire became very powerful, but many of their vast cultural achievements were borrowed from the Greek Empire that preceded them. Most of the scholars and teachers in Roman schools were from Greece, so the Greek influence in Roman society was very pervasive. Those who teach often have a very marked impact on the direction of a society.
Roman scholars had a great respect for Greek literature and and the Greek civ in general (something that carried through the Renaissance, effectively stopping scientific thought) and were more prone to translate and analyse the Greek best plays/poems/essays etc . I believe originality and language to be the main factors.
Though the byzantine empire was ruled by roman low and roman political institutions and the official language was latin, greek was widely spoken and students received education in greek history, literature and culture. And as the centuries went by, greek language took its place in the public administration of the byzantine empire alongside with the latin and in many occasions it substituted it.

The language of the ancient Roman emperors was Latin. Most also were taught Greek in their youth. Later in the empire, when emperors were born in the Roman provinces, they spoke the language of their birth place.
