Hearing is believed to be the last sense to be lost before death. You can talk to a dying person as if each of your words can be heard. Therefore, do not talk over the person pretending that he is not there because they can still every word that you are saying.

It is commonly believed that dying persons get a moment of "clarity" before they die. This is often thought to be increased hearing.

My best bet on the next to last would be the feeling of touching his/her face, but this would in most cases be individual.

I do not think it is possible to "measure" this though. Even if we could, the data would not really be of much use.

We should be careful with the things we say.

Nurses at old folks homes and institutions often say "Be careful with what you say. He/She might hear you now."

I don't know the facts around the senses. I only bring forward what I observed and was told when I worked in an old folks home around dying people.

It is good to pay the dying person respect and be nice in any case.

The last sense that leaves your body after you die, is your hearing. You can hear everything around you for a certain amount of time before all of your senses leave you.
