Mainly green, leafy vegetables (cabbage, lettuce, broccoli, cauliflower leaves etc) - they'll also eat fruit such as apples and grapes. If you have dandelions growing where you are - they'll also eat those (as a treat) - both leaves and flowers.
Russian tortoises need to eat a dry grass tortoise supplement. This may be found in a local pet store. This is not usually their food of choice, but they do need to eat it so they absorb nutrients. They also really enjoy pure romaine lettuce. This lettuce is usually what they love to eat, and they will eat it as long it is in their cage. You may also ONCE IN A WHILE feed them small slices of banana and apple. Once in a while means at the very most once a week. Also, carrots are a great source of food.
