Vertical Cabling - Runs between floor to floor. It is used for Core to Distribution (or Access) switch connectivity. Usually consists of fiber cables Horizontal Cabling - Runs on one floor. Runs from Distribution or Access switches to the end user. Usually copper.
The maximum distance specified in the standard is 100 meters. 90 meters of that length may be for the actual horizontal wiring and 10 meters for connections from the horizontal wiring to the workstation. The total length is 100 meters, however.
Ethernet is the standard now, so Cat5e or better cabling is the way to go. All workstation/phone endpoints should be wired back to a central closet that will contain the Ethernet switch. Maximum cable distance is 300 feet.
