Folding in cooking is a technique used in lots of recipes, particularly in baking things such as bread and cake. it is literally - as it is called - folding the dough or mixture in two, often using a spatula. it adds air into the mixture and helps mix ingredients a little more. hope this helps :)Jessiejelly96

When combining ingredients, "fold" means to draw the spatula or spoon down the side of the bowl to the bottom, then bring the spoon up through the center of the batter, bringing ingredients from the bottom up and over the top of the mixture. Turn the bowl partway around and repeat until the ingredients are evenly combined. This technique combines ingredients without beating the air out of the batter.

When preparing rolled or kneaded bread or pastry dough, "fold" means to lift one edge of the flattened dough up and bring it to the center or to the opposite edge, doubling the thickness of the dough. The recipe might call for many folds to create flaky layers in the dough, or it might require only one or two folds to cover fillings or to create a pocket.

It's like mixing, but not as vigorous. Folding is just dispersing the ingredients throughout the bowl, but not mixing the entire thing.
