The involuntary muscle action of the alimentary canal is called peristalsis. It uses this muscle action to move food through.
Voluntary means it's under your direct control. You think about the muscles moving and they move to do whatever you told them to do. The brain sends an electric signal to the muscle(s) and cause them to move.
When you decide to move, an electrical signal called an action potential is generated in your brain. This signal travels along your neurons and reaches the skeletal muscle cells via motor neurons. At the neuromuscular junction, a chemical called acetylcholine is released, which stimulates the muscle fibers to contract and initiate movement.

To move a voluntary muscle, you just want to do it. When you want to walk, the nervous system sends a signal to the brain and the skeletal muscle to move your legs. So you are making your leg move by voluntary muscle, which is skeletal muscle.
Smooth muscle, also called involuntary muscle because we don't have to think to make it move, moves the food in waves of peristalsis.
When you want to move a muscle, your brain sends a message out to the muscle you want to move, and the muscle sends a message back to your brain that your moving it and where.
