Nyama choma (Swahili for roasted meat) is considered a speciality of Kenya's, and can be meat from almost any animal. The main staple food of Kenyans, however, is maize. It can me eaten in a variety of ways, but is often ground into meal and cooked with water to make Ugali Nyama na Irio (meat with maize) is also a very traditional and popular dish.
