Three wires are used - a ground, and two signal wires that are opposite each other. Noise will inherently "hop on" the signal wires, but as they are close to one another, it is likely the noise will be nearly the same magnitude and sign on each wire. Since the amplifier CMRR is high, this noise does not propogate through the amplifier, while the original signal is amplified.
