It all depends on the type of plane, commercial airliners have a yoke however most light aircraft and gliders have what is called a control stick.
So a yoke or a control stick depending on the aircraft.

The word "helm" can be used, but it generally refers to the entire steering mechanism, whether it's a sumple rudder and tiller, or a pneumatic wheel. I'd normally say "wheel" to differentiate it from a tiller, and to single that particular piece out from the entire mechanism, but "helm" is also fine.
Usually they call them kick panels or lower kick panel.
The proper term is helm. Hence the person doing the steering is called the helmsman.
