lettuce Is only true for certain types. There are canned pickled lettuces.
The likely answer is watermelon. However, there are commercially available dried watermelon chips, and these can be made at home (although they may have limited shelf life). Pickled watermelon rind is also sold in some areas.
Sodium is usually added to canned corn before it is processed to improve its flavor. Much less sodium, if any, is added to frozen corn. However, it is possible to buy canned corn that is low sodium, or even has no added sodiuml.

Peas, like other vegetables, are canned or frozen at the peak of their freshness to preserve them. Canned peas are heated/cooked during processing and so are a darker drab green and a softer texture as opposed to frozen peas which are blanched to a bright green and close to raw. Frozen peas can be added to a dish at the last minutes of cooking/heating to preserve that color and texture.
