160-180* with 180* being the cleanest combustion with properly set timing and carburetor adjusted, just make sure it doesn't get above 200 because without full synthetic oil you run the risk of spinning a main bearing in one of these old small-block Chevy's.

That's coming from a mechanic that has been rebuilding 283's, 327's, 350's, and 400's for 20+ years.
