The Ph value of the gastric juice varies from 1 to 3 depending upon the genetic makeup of the person, the population of the Helicobacter pylori in the stomach of the person and the type of diet that is consumed. This acidic value is due to the presence of HCl (Hydrochloric acid) in the gastric juice which is produced by the Oxyntic cells of the stomach walls. Its acidic nature is to kill the various harmful microorganisms that a person may ingest along with the food.
