Why is asparagus expensive, well read on, the growing of asparagus is a labour of love and patience. Asparagus is grown from 'crowns' these crowns take at least one year to cultivate, they are also expensive to buy, currently around £1.30 ($2.60) each.
Once you have acquired your crowns you need to dig trenches, these require a rich manuring to prepare for the planting, a further year of growth must pass before asparagus can be harvested, once in season the the crop needs to be hand cut daily. Finally the cutting season is very short, approximately 7 weeks from 1st May to 20th June.

Some factors that affect the price include
Availability of the produce. If you have a drought, or flood, or infestation Produce supplies are way down which raises the price.
Is the produce in season? A lot of produce products go way up in price over the winter.
Cost to ship the produce to the market. Are gas prices high? If so the price is transferred from the shipping company to the market, and they increase the price of the product on their shelves. Distance also factors into the cost of shipping. If you are getting produce locally shipping prices will be a lot lower than if the product is shipped thousands of miles.
