The production of sex cells is called "gametogenesis." This makes sense since a gamete is a reproductive cell and "genesis" means creation or beginning. If the sex cells being produced are sperm the process is called "spermatogenesis" and if the sex cells being produced are eggs it is called "oogenisis."
