FRACTIONATION is the Process. By heating Petroleum in a Fractionation Tower or Column, the lighter Products (lower boiling points) rise to the top first and can be "Skimmed" off. Thus we can Process off Gasoline (light) and then Diesel Fuel (heavier) separately.
The other term normally used is (catalytic) 'cat cracking' to the different densities, so the towers used for it are referred to in the industry as 'cat crackers'.
It's called refining the petroleum (occurring at refineries). This process is used in order to separate the crude oil into products such as diesel fuel, heating oil, liquified petroleum gas, kerosene, gasoline, or asphalt base.
Fractional Distillation
Fractional distillation is used to separate crude oil into many components.
Fractional distillation is used to turn crude oil into petroleum, and then the products of that (petroleum is one of them) can be broken down into another more flowing substance using a process called cracking, normally done with aliminium oxide as a catalyst
Crude oil distillation is followed by the process of petroleum refining. There are many branches leading off into producing diesel, petrol, and the many products that result from the refining process.

The basic answer is distillation, although there are numerous steps involved. Research petroleum refineries & you can get a better understanding of the process.
Fractional Distillation
The extraction of petroleum is the process by which usable petroleum is extracted and removed from the earth.
Crude oil can be refined to make a plethora of petroleum product. Kerosene, gasoline, petroleum jelly (commonly known as Vaseline), lubricating oil, and heavy fuel, and many other products. Crude oil contains many different substances which all separate during the refining process.
