It has to be rinsed completely so that it won't stay on your clothes and stick to them like chalk. If the detergent isn't rinsed properly then it will just sit on your clothes.

SDS, sodium dodecyl sulfate, is a detergent, which means it's a molecule with both a hydrophobic (hates water) and hydrophilic (likes water) end.
