Food-borne illnesses remain a serious health threat to the general public. Food hygiene practices and food safety measures help to reduce the risk of food-borne illness by controlling and reducing the microbial contamination of food sold to consumers.

Veterinarians get involved with this mostly on the meat and poultry products food chain. If a sick animal is slaughtered for food, the organs and meat may be contaminated with bacteria that cannot be removed through normal processing. Because of this risk, in the United States (and most other developed countries), a veterinarian is hired by the federal government to be on duty at slaughter plants to evaluate the live animals and dead carcasses for disease. If a disease is found throughout the animal, the meat and by-products are condemned and prohibited from entering the human food chain.
