I would assume by "off the book" you mean jobs that paid cash? If this is the case, you certainly don't need empty time periods and you could classify these jobs under "Self-employed" and still be able to cover the times, and list duties or experience.
Since 'Off the books' means that you broke the law and didn't pay taxes, it would clearly indicate to me that you are a crook. Since the jobs don't usually keep earnings and employment records, the employment would be impossible to verify.
