I always use ShelfLifeAdvice website for these types of questions. For canned vegetables it says the shelf life can last 3-5 days once opened and placed in the fridge, but if unopened it can last for an entire year!

i agree salt is said to never go bad and it tastes so good

Properly canned veggies should be good from harvest to harvest. They could last a few years, but try not to hang onto them much longer than one year.

Usually about 3 years but you can add a preservative like sodium benzoate or EDTA to enhance life.
