Jota, also known as Istrian stew, is a stew, not a soup.
It originates from the Croatia/Slovenia area and is sometimes found in northern Italy with Italian twists to the recipe.
Jota is made from beans, sauerkraut or sour turnip, potatoes, bacon and spare ribs.
It has olive oil in the recipe and usually seasoned with garlic.
In Slovenia it is usually accompanied by polenta (boiled cornmeal).
The stew is very popular in Istria, which is a region shared by three countries, Croatia, Slovenia and Italy. Hence its other name, Istrian stew.
The dish is a unique combination of Central European and Mediterranean recipes.
