Now, that the official games are out (Pokémon Sun & Moon) There are 802 Pokémon in total, without including Mega Evolutions and Alola Forms, that are variations of existing Pokémon.
A better question would be what Pokemon CAN'T you get. Just about all of them are obtainable, except for the following: The three Kanto starters and their evolutions Mewtwo Mew The three Johto starters and their evolutions Murkrow and Honchkrow Misdreavus and Mismagius The three Johto Legends (Entei, Raikou, Suicune) Lugia Ho-Oh Celebi The three Hoenn starters and their evolutions Trapinch and it's evolutions Clamperl and it's evolutions Latias and Latios The Weather Legendaries (Groudon, Kyogre, Rayquaza) Jirachi Deoxys Glameow and Purugly Stunky and Skuntank This leaves a grand total of 56 Pokemon that are unobtainable by normal means.

The new Mega Evolutions that premiere in Pokémon Omega Ruby and Pokémon Alpha Sapphire are Swampert, Sceptile, Latias, Latios, Rayquaza, Diancie, Beedrill, Pidgeot, Slowbro, Steelix, Sableye, Mawile, Sharpedo, Camerupt, Altaria, Glalie, Salamence, Metagross, Lopunny, Gallade and Audino which officially adds up to a total of 46 species being capable of Mega Evolution and there are 48 Mega Evolutions overall as of Pokémon Omega Ruby and Alpha Sapphire's release.

In Pokémon Red, there were only a total of 3 evolutions for Eevee and they were Vaporeon, Flareon and Jolteon. In order for it to evolve into Vaporeon, you would need to use a Water Stone on it. In order to evolve it into Jolteon, it would require the use of the Thunderstone being used on it and in order for Eevee to evolve into Flareon, you would need to use a Fire Stone on it.
