(Butter)cream and jam xx :-D
cream and jam
jam. Jam is the traditional filling but quite often especially in shop bought cakes a layer of either buttercream or fresh cream is added.
It is a Victoria sponge.
No its explodes
A Victoria sponge is meant to be light, moist, well-risen, flavourful, a good colour, and with a thick layer of filling in the middle. The first two elements are heavily influenced by how well the butter and sugar are creamed together. Flavour, and to a certain extent colour, are achieved by using good quality ingredients (i.e butter, not margarine, good quality eggs (which give a yellower yolk), caster sugar (not granulated), and vanilla paste etc... Also, for most Victoria sponge cakes, filling seems to be an afterthought. Whereas it really has as much importance as the actual sponge.

Victoria Sponge

easy you put any flavouring although Victoria sponge is rather tastey with buttercream and jam(any) hope this helps
It either refers to a sponge cake (such as a Victoria sponge), or a kind of pre-ferment used in breadmaking. The context will clarify which it means.
