This is a puzzle. The model 1883 Grade 3 is the same as Wm. Ellery grade; apparently Waltham used both name and number designations interchangeably, and the only difference between the two is what they're called.
The 1883 model was produced with 7, 11 or 15-jewel movements, with the 11-jewel being by far the most numerous in production. The movement to your watch was manufactured between February 1, 1891 and April 30, 1891. There were two production runs of 15-jewel 1883 Grade 3 movements manufactured immediately before the one you have. It seems there was quite a bit of variation from one watch to the next in that particular model.
In the late 19th century, pocket watches were sometimes assembled by local jewelers, rather than shipped pre-cased from the factory. The customer could purchase a movement, then choose the case separately. Your watch may have been one in which the original customer selected a bit higher quality case than movement, or the watch may have been recased at a later time. Research seems to indicate 14k gold cases were scarce for that particular model and grade; most of the movements were housed in coin silver or gold-filled cases.
Therefore, it seems the greatest part of your watch's value lies in the case itself. A 14k size 18 hunter case has significant assay value without regard to it appearance. If the case is particularly unique or ornate it would be more appealing to collectors, thus increasing the value.
After attempting to research comps, I'm not satisfied I can estimate the value of your watch. You would be wise to have it professionally appraised.

Cases, which were sold seperately from the movements, vary more widely. The value on the case depends on the style, hunter or open-face, and what the case is made of, brass or gold. A good case simple case is worth 40$ for an open face and about 80$ for a hunter. A gold or silver case is worth its weight in scap value. Best thing to do is check on Ebay and see what similar watches are selling for.
