I'm a Chef and I make pasta dishes with Zucchini, Yellow Squash and Carrots cut into long strands like Spaghetti. There is a setting on most Mandalins for this. Or you could just cut them by hand. I like it best with a little Spaghetti. That way, you almost can't tell what's starch and what's not. Hope that helped.
