Check your idling speed it might be too low to support the AC motor, so when you turn on the AC the engine dies, try increasing the idling speed a bit at a time.

Try a new battery, or get a jump start. Sometimes there is not enough power in the battery to start the engine.
It could be that the fan switch on the thermostat is turned on so the fan runs all the time not just when the A/C or heat is on. This is supposed to be the most efficient method.
Check your battery and the leads to the battery. Make sure the posts are clean (no corrosion) and tight.
Low coolant? Bad thermostat? check to see if fans are working. cracked block , head or blow head gasket. also bad gauge switch will make it look like the motor is overheating.
