Safed watana or ragda chana which is used in ragda pattice or pani puri is dried peas which must be soaked in water overnight and cooked in a pressure cooker with a pinch of salt. Never use soda bicarb to hasten cooking, it spoils the taste. very healthy and tasty. kids love it.
