What is zita?

Zita is a tube pasta that is similar to penne but with a

slightly larger diameter. Penne zita is approximately 1 1/2 inches

long. "Zita" refers to the type of cut. Most Penne pastas are cut

diagonally across the tube where the "Zita" is a straight cut

across the tube. The pasta is usually made of high-gluten semolina

flour and can be kosher.
