Potato Kibbe. I grew up as the favorite grandchild of a Lebanese Grandfather and learned how to cook everything in his kitchen. Once a year, in summer, we would have the Nader/Edwards/Marieb picnic in Livonia MI and it would be all Lebanese food. Yummy! My entire family pronounced it 'kibbie' and I assume batata (potato) would be 'batah-tah.' I made potato kibbe for Easter dinner at my other half's relation's house and it was served right next to the turkey! It has a layer of real mashed potatoes, a layer of sauteed lamb/butter-sauteed pine nuts (or 'snoobar') and sauteed onions, then another layer of potatoes. It is really good!

Sauteed onions can potentially support bacterial growth if they are not stored properly after cooking. The moisture and nutrients in onions create an environment conducive to bacteria, especially if left at room temperature for too long. To minimize the risk, it's essential to refrigerate cooked onions promptly and consume them within a few days. Proper food handling and storage practices are key to preventing bacterial growth.
