The Tree of Life was a mythical tree that formed part of the creation mythology of many ancient Near Eastern religions, including Judaism, as well as early Greek mythology. By eating the fruit of the tree, one would become immortal.
Almond. There are many theories as to what sort of fruit the Tree of Life bore. (esp. that of Genesis) If one studies all of the references in Scripture, they will come to the conclusion that it as indeed the Almond.
The Menorah was a symbol of the Tree of Life from the beginning. If one reads the description of the Menorah in the book of Exodus they will discover that the Menorah was decorated with the branches, flowers and fruit of the almond.

The Tree of the Knowledge of Good and Evil was probably a Pomegranate. In Scripture it can be seen that the Almond and the Pomegranate where the only plants specifically stated to decorate the Tabernacle or the Temple. The Almond Tree was used in the form of the Menorah (Tree of Life) and golden Pomegranates were strung on chains both on both the interior and exterior of the Temple. The Pomegranate also decorated the Priests garments and archaeologists have recently turned up small ivory pomegranates thought to have decorated the tops of the priests staves.
The interior of the Pomegranate is also of note. The juice filled bubbles surrounding the seeds are perfectly edible and delicious (the Good) while the white matrix is bitter and indigestable (the Evil). Thus even the makeup of the fruit itself is a symbolism.
