It's a kind of fresh pasta made with eggs, flour and boiled herbs (usually nettle's leafs).
Well both start of fresh meaning that herbs are grown and harvested. Dried herbs are packaged and sold at the grocery store. Of course by the time they reach your kitchen, a significant amount of time has passed and the flavor might be quite low. Fresh herbs has been picked from the plant and added to cooking immediately when flavor is at it's highest level making your meal a lot tastier.

Some of the stronger herbs I've come across are rosemary, dill, cilantro, and mint.

Herisa is a vegetable stew often garnished with okra and sweet spices. Pluumata is a spicy mix of herbs, pickled vegetables and pasteurised goat's milk.
The only herb that contains/is tea is "Camellia sinensis". All other herbs don't contain tea.
