Proteins differ from each other due to the structure and shape of the overall protein when it is folded. There are 4 levels or protein structure (not to get into specifics of high-school Biology), but in the 3rd level of protein structure, the protein is folded into a unique form/shape that differs from other proteins. This shape gives the protein its unique job in the body (repair cells, transport molecules, stimulate growth). Proteins also differ from each other based on their monomers (monomers - basic building blocks). Proteins are made of amino acids, which are bonded together by peptide bonds. A chain of amino acids is called a polypeptide. Polypeptides differ from each other due to the different sequence of amino acids which they are made of.

Well, proteins are molecules made up of amino acids. So you can say it is different than nucleic acids or fats because its components are different. Functionally, proteins are essential molecules for cells to carry out man bodily process such as metabolism, cell division, synthesis, catalysis, transport, hormonal control and so on. These bunch of functions are only typical to proteins.
