definitely not cuz cottage cheese ain't have so much fat as ricotta cheese. If ur on a diet, id say follow the recipe ur usin so your diet works. :)
It depends on why you are "substituting" the beef. In a recipe, no. As a dietary substitute, perhaps. Both beef and cottage cheese are forms of protein, dietarily you can eat cottage cheese rather than beef. Trying to use it in a recipe instead of beef is a potential disaster.

Id depends on what your intended use is for the ricotta as to whether cream cheese may be substituted. In general i would say no because the two cheese while both being soft and white are very different in their textures and uses in food preparation and cooking. sometimes mascarpone and cream cheese are interchangeable but i would insist on using ricotta when a recipe requires it.

The ricotta wasn't drained before adding it to your recipe. To avoid the excess moisture, drape a piece of gauze over a bowl and let the edges drape down on the outside of the bowl. Spoon the ricotta cheese into it so the cheese is elevated and the gauze acts as a strainer. If you have a problem keeping the cheese elevated, put a small bowl upside down inside the larger bowl so the ricotta rests on it, letting the moisture drain to the sides. The bowl should have a considerable amount in it, which should be drained. Now you can use the ricotta in a recipe without having it leak out of the edges.
