Mexican Independence Day gets confused with Cinco de Mayo. Mexico gained independence from Spain on September 16, 1810, so that is their independence day. Cinco de Mayo celebrates the Mexican victory at the Battle of Puebla during the French-Mexican War on May 5, 1862.

Mexico won it's war of independence in 1821 (against Spain). Independence day evolved over time as a result of this, with the "Cry of Independence" theme being adopted in the late 20th Century.
Because September 16th is the day father Miguel Hidalgo started the revolt that eventually became the Mexican Independence War against Spain.
