They cut his leg off for the filming of the movie. They reattached it once filming was complete. You can see in some of the scenes that were shot after they reattached his leg that he has a noticeable limp.
Short answer: Johnathan Collier There are 2 brands of whiskey featured in the movie "Unforgiven". The one William Munny(Clint Eastwood) drinks to break his sobriety is Johnathan Collier. In other scenes such as at the "Bar T" the whiskey is Double Eagle. Back at "Greely's" for the shootout... both whiskies are seen on the bar and tables and he is seen taking a shot just before killing Little Bill(Gene Hackman). It is unknown from that angle which bottle he chooses. But if you rewind the scene to the view from the billiards area, it can be seen that the Johnathan Collier bottle is the only one left standing. So it must be reasoned the only whiskey he drinks in the movie is Johnathan Collier.
If that film had the actor Aldo Ray in it, it's not a rare scene and could be more than one movie. In fact, maybe not a cigarette was involved, but Japanese "surrenderies" were shot in one of Clint Eastwood's latest war flicks..."Letters From Iwo Jima" released in '07 or '08.This scenerio was also described in the Norman Mailer classic The naked and the dead
The old one-room schoolhouse scene was shot on Interstate 15 at a rest area about 41 miles south of Great Falls, Montana. (I wasn't 100% sure until I compared a screen shot of Clint approaching the schoolhouse with the Google street view looking southbound, which is geographic west.)
One for sale in my local area (Boise, ID) is going for $175.
