The answer is obvious. Many of the organs transplanted are organs that people cannot live without. These organs are transplanted from people who have passed on and left it their will to transplant certain organs from their body.
It is a matter of debate, but in general, yes, for two reasons:1. Jewish people may break almost any law in order to save a life (except for murder, adultery, and idol worship).2. Even more importantly: in non-life threatening situations, many authorities would still allow pig organs, because technically pig meat is unkosher only if it's dead. If it's a living organ, that's a different story. (If you count living pig organs as unkosher, you'd also have to count living human organs as unkosher).
