The Mughal Empire promoted religious tolerance for political stability and economic prosperity. Emperor Akbar implemented policies like the "divine faith" to accommodate a diverse population. The empire benefited from the contributions of Hindus, Sikhs, and others, leading to a more inclusive and tolerant society.
Muslim rulers were never tolerant to Hindus. Most of them are famous for their Temple destruction activity. They have written their "Idol Breaking" activity with pride in their chronicles. All of them imposed "Jizya Tax" on Hindus. The Hindu Officials were often charged with false charges and forced to convert to Islam. Great-grandfather of Mohammad Iqbal, Pakistani poet was also converted to Islam in the same way. If the question is asking why Muslim Rulers did not forcibly convert Hindus when Hindus are clearly polytheists, the answer is that there were just too many Hindus and too many of them were in remote regions.
Many of the later Mughal Emperors were less than tolerant of Hindu customs and traditions. The memory of that history made most Hindus disinterested in returning the Muslims to power.

Every Mughal ruler's policies helped or harmed the civilians in one way or an other. to tell the truth, each mughal ruler's policies disturbed or developed the country as their were both hindus and muslims to deal with.
While Hindus are generally tolerant of all religions, including Islam, Islam condemns non-Muslims. You might be tolerant; he might be tolerant; but likely your family and and religious community will not tolerate or welcome his even were he to convert. Marriages where the families are very inimical, especially for such a deep and basic reason as religion and all that it means, have little chance of success.
