Chicken pies can be frozen. I usually have a couple in my freezer. I take one out in the morning to thaw, and then cook the pie in time for dinner. Not sure what 'potpie' means?

The number of pies placed in a conventional oven does not affect the baking time. Two, three, or even four pies placed in an oven would bake for the same amount of time as just one pie. The number of items only changes baking times in a microwave oven.

Some apples have more moisture in them and cook down more. You may be over filling the crust and not getting it sealed around the edges.
