Well the first thing you need to be a Jedi is Force sensitivity, and to train under the Jedi ussually in the Jedi temple. Imj not sure what era we are in however sometimes the Jedi ionly accept you from thbe age of three.
Luke Skywalkers new Jedi order allowed adults to join however Mace Windus did not as proven in episode 1 although they did not train Anakin Obi Wan did not the Jedi order he was not accepted into the jedis order because they sensed fear in him.
